Healthy Shrimp and Pasta Dish

When I grocery shop for the week, there are certain products that I consider staple ingredients that I always purchase or have in the freezer at home for a quick week night meal for the family and shrimp is definitely one of them. One of the things that I love about using shrimp is that it thaws quickly and it doesn't require much cooking time.


On any given night when I get home from work,  I can easily whip up a quick and healthy meal using shrimp and any other ingredients on hand.

I love healthy, simple and quick meals that are filling and delicious.  For this dish, I didn't follow a recipe,  I just used the ingredients that I had on hand to create this yummy meal.




Recipe  

Ingredients: 
- Shrimp (cleaned and deveined)
-Squash - yellow and green (chopped)
-Sweet peppers - red and green (chopped)
-Minced garlic
-Olive oil
-Farfalle (bowtie) - multi grain pasta
-Fresh parmesan cheese
-Salt and lack pepper

Wash shrimp and season with salt and black pepper put to the side. Dice vegetables and boil water to cook pasta. Add pasta when water starts to boil. Follow instructions on the pasta box for cooking  

Add olive oil to pan and saute garlic and shrimp together. When shrimp is half way cooked add diced vegetables, cover pan and turn the flame down. Let ingredients simmer together for about 5 - 10 mins depending on how thick you diced your vegetables.  I diced mine small so they cooked really quick.

After 5 - 10 mins remove cover and check vegetables, if cooked to your liking, turn flame off and add parmesan cheese. Dish is ready to be served with cooked pasta. Enjoy!
